Easy Strawberry Tart

Welcome spring with this Strawberry Tart made with a Puff Pastry crust and layers of mascarpone, strawberry champagne jam, and fresh strawberries. 5 ingredients. 5 minutes of prep. Talk about an easy dessert!

I admit it, I’m really excited for summer to arrive. All the fresh berries and flowers and, oh yeah, warmth! But, before summer arrives, we get to enjoy spring! I wanted to create a fun little dessert that works for both seasons, and this strawberry tart was just the thing. This Strawberry Tart has just five ingredients: Pepperidge Farm® Puff Pastry Sheets, strawberries, mascarpone, sugar, and jam. I also used a bit of egg to bring out the golden color of the Puff Pastry, but that’s not a must do. (Unrelated… does anyone else really want to spell “mascarpone” “marscapone” instead? Or is that just me?)…

I’m so excited that it’s almost spring. After a chilly, rainy winter here in LA, the trees are blooming and flowers are starting to sprout! Thanks to all their rain we were treated to this winter, it appears we’ll have a very green spring and summer. And, we’re also having a huge wildflower bloom, so I know where I’ll be this coming weekend!

Spring is just made for entertaining. The flora and fauna (us included) are ready to shed our winter coats and celebrate! And, whether that’s on a sunny hike or over a brunch with friends (East Coast friends, I promise winter is almost done and you’ll be right here with us in a few weeks!!!), you’re going to need something to snack on while you do. That’s where these matcha croissants come in. And, to make celebrating and entertaining that much easier, I made these with Pepperidge Farm® Puff Pastry Sheets….

You know what I mean. That oh, it’s morning… oh it’s really nice out… oh I should — screech — it’s Monday?! feeling? Send in the cake!

Because while on Friday a chocolate cake, or a carrot cake, or maybe even a grocery-store bought sheet cake (hold up, let’s not get crazy), will do. But, on Mondays, we need something special. And, unicorns are special.

So, yesterday, I made this vanilla rainbow unicorn cake. It’s not the first rainbow cake I’ve made, but I took this one to the next level with vanilla frosting, sprinkles, and a Twinkie filling. It was super fun to make and not difficult at all! The hardest part was not eating it….
